Egg tarts~蛋塔

好久没做蛋塔了! 刚好侄女们今晚会来,她们又爱吃蛋塔,今天就来做蛋塔。太久没做,不知道会不会失败?还好出来的效果不错,但是我可是忙了整半天啊!




食谱 (取自东东
 挞皮:(可做11个)
A:125面粉,7.5g奶粉,30g糖
B:85g奶油(冷)
C:20g蛋液,1/8tsp香草精

  1. 将A混匀,加入B搓成粒状
  2. 加入C拌匀成面团,用保鲜膜包好
  3. 冷藏半小时,备用
  4. 将适量的面团搓匀,放入挞模里
  5. 把面团捏压至挞模边缘,修边

蛋浆
清水170g,糖50g,煮沸,离火待冷
鸡蛋2个打散后加入淡奶25g,香草精1/8tsp
还有冷却的糖液拌均匀,过滤

将蛋浆倒入塔皮中,180度烤18-22分钟

  3. I love egg tarts too! But usually have to finish up in the day it's baked else it'll be soggy crust the next day. :P will bake it next week, thanks for the reminder! :))
